When we were eating vegan, I can't count the number of people we met who said, "I'm a vegetarian . . . well, except for bacon." Not long ago we saw a sign in a restaurant that read, "Bacon, the gateway meat."

We ate a raw, vegan diet for a number of years. Since then, we have experimented with a number of diets; currently it's a modified Paleo. Our main concern is that the animals be treated respectfully with no hormones, gmos, or antibiotics. The bacon in the painting is from a local farm, which we cured here at home.
